Let me be clear about something from the start: I did not set out to become a symbol. I set out to run an accountable brunch restaurant that honored the full relational complexity of the food on its menu. That the two things are now in direct conflict is something I am processing, in real time, with the help of my therapist and a dwindling cash reserve.
But I stand by the policy. Mostly.
How We Got Here
It started, as most things in my life have started, with a podcast. Specifically, a 94-minute episode on food sovereignty, indigenous land rights, and the quiet imperialism of the avocado trade that I listened to while making cold brew at 6 a.m. last October. By the time I'd finished, I was weeping into the filter and absolutely certain that something had to change.
Avocado toast is, without question, the signature item at Tender Roots. We sell approximately 140 orders on a weekend morning. Each one represents what I now understand to be a dense node of intersecting ethical obligations — to the Lenape people on whose unceded land our restaurant stands, to the Mexican farmworkers who harvest the fruit under conditions that range from difficult to genuinely grim, and to the atmosphere, which absorbs roughly 0.9 kilograms of CO2 per avocado depending on shipping origin, a figure I have since had printed on our menus in a tasteful sans-serif font.
So I did what any conscientious small business owner would do: I wrote a script.
The Script
The Avocado Toast Accountability Statement, as I officially titled it, runs approximately four minutes when delivered at a respectful, unhurried pace. It covers three areas:

Land Acknowledgment — a recognition that Tender Roots operates on the traditional territory of the Lenape people, with a brief history of the 1626 land transaction that my research suggests was, at minimum, conducted under ethically compromised conditions.

Carbon Disclosure — a summary of the estimated carbon footprint of one avocado toast order, including toast (locally sourced sourdough, relatively low impact), avocado (Michoacán, Mexico, moderate-to-high impact), microgreens (rooftop-grown, negligible impact), and everything else (complicated).

Labor Impact Statement — a 90-second overview of conditions facing avocado farm laborers in Mexico, sourced from a 2022 investigative report, condensed into what I believe is a compassionate but honest summary.
Servers are required to deliver the Statement in full before the table's order is entered into the system. Tables may not interrupt. They may, however, ask clarifying questions, which I encourage, and which have so far included "Can we just get eggs?" (yes), "Is this legally required?" (no), and, memorably, "Are you doing this at every table or just ours?" (every table, sir, we are a consistent establishment).
The Operational Realities
I will be honest with you, because honesty is a core value at Tender Roots, right up there with accountability and not using iceberg lettuce.
Wait times have increased.
Before the policy, our average time from seating to order was roughly eight minutes. It is now 45 minutes, a figure that has appeared in two Yelp reviews, one local blog, and a text from my mother that simply read Theo. On busy Sundays, the Statement creates a cascading delay that our floor manager, Priya, describes using language I won't reproduce here but that I understand is common in the restaurant industry.
We have lost three servers since October. Two cited "the script" as a contributing factor. One said she was fine with the land acknowledgment but found the carbon math "emotionally exhausting to perform before 10 a.m." I respect her honesty. I gave her an excellent reference.
Avocado toast sales are down 34%.
Spinach omelet sales are up 89%.
The Vibes, However, Are Incredibly Accountable
Here is what I want the critics to understand: something is happening at those tables. I have watched it. There are customers — not all of them, but some, and some is not nothing — who put down their phones during the Statement. Who make eye contact with the server. Who say, afterward, "I hadn't thought about that."
One woman cried. She then ordered the avocado toast anyway, but she tipped 40%, and she left a note on the receipt that said thank you for making me feel something. That note is on my refrigerator. It is getting me through this.
The regulars who remain are, without exception, deeply committed to what we're doing here. They arrive early to account for the wait. They bring friends. They describe Tender Roots as "the only brunch spot in Brooklyn where I feel morally located," which I have considered putting on a t-shirt.
The Yelp Situation
I would be remiss not to address the reviews.
We currently sit at 3.1 stars on Yelp, down from 4.4. A selection of recent feedback:
⭐ — "The land acknowledgment didn't mention the specific band of the Lenape nation my family descends from. Felt erased. Avocado toast was fine."
⭐⭐ — "Four minutes is a long time when you're hungover. The toast was cold by the time it arrived because of all the acknowledging. Deducting one star for vibes."
⭐ — "My boyfriend proposed during the carbon disclosure. I said yes but I'm not sure the moment was fully mine. One star."
⭐⭐⭐⭐⭐ — "Finally. A restaurant that sees me. I wept. I will return. The avocado was perfectly ripe."
I read every review. I am learning from them. I have already expanded the land acknowledgment to include two additional tribal nations following the first one-star complaint, which has added approximately 40 seconds to the Statement and prompted Priya to request a meeting I have been rescheduling for three weeks.
Where We Go From Here
I am not abandoning the policy. I am, however, in discussions with a local theater director about whether the Statement might be more effectively delivered as a short dramatic performance staged at the host stand while tables are being seated, which could reduce per-table time and, frankly, might be more moving.
I am also considering a QR code option for tables who prefer to engage with the material at their own pace on their phones, though this feels like a compromise I'm not entirely at peace with.
What I know is this: avocado toast did not appear on your plate in a vacuum. It arrived trailing history, labor, land, and atmosphere. The least we can do is sit with that for four minutes before we Instagram it.
The least. Four minutes. That's all I'm asking.
Priya has requested the meeting again. I'm going to take it this time.
